2、有效地向下属分派工作及责任，实施工作岗位责任制。
3、制定各种点心、面食的品种和标准食普。
4、严格验收从市场采购回来的食物、原料，保证制作的材料是最新鲜、最高质量的。
5、每天检查本档口的食品和卫生，及时发现和解决出品的问题，确保出品质量。
6、严格控制经营成本、费用。
7、严格控制食物的加工、保险和存放。
8、检查每天存货，按需要填写鲜活货品采购单。
9、研究、改进、创新点心、面食的品种。
10、做好每日盘点及每月盘存。
11、监督员工考勤、纪律，登记员工考勤每月上交厨师长。
组织、指挥、参与员工培训。
12、不断激发员工的积极性，给员工发展和提升机会。
13、参与厨房部的各种会议及主持本档口员工例会。
14、每天向厨师长汇报工作。
15、完成厨师长分派的其它工作任务。
